Tea is made from the young buds of the tea tree, going through 5 processing steps to create a finished product that is dried tea.

- Picking: harvesting tea buds, usually consisting of 1 young leaf that is still rolled and 2 adjacent leaves (1 shrimp 2 leaves).

- Wither: soften tea buds. There are many ways to make depending on the type of finished tea you want to make: withering in the sun, sautéing in a pan, or boiling.

- Crushing: Crushing tea buds, breaking cells to release compounds in tea leaves, by rolling, rolling, rubbing or squeezing. This process gives the finished tea a variety of shapes (flat, hook, round, etc.)

- Oxidation: This is a natural process when tea buds are picked, enzymes will react with oxygen, it takes place during withering, crushing and short incubation. Oxidation stops when the enzyme is destroyed by heat (frying, boiling) and drying (drying). Oxidation control produces different types of tea, which results in the rich flavors of the finished tea.

- Drying: Eliminate water, completely stop the oxidation process and shape the finished tea fiber.

Depending on different levels of oxidation, tea is classified into 3 main groups:

1. Green tea: no oxidation.

2. Oolong tea: partially oxidized.

3. Black tea: fully oxidized.

Green Tea (Green Tea)

Green tea is made in 4 steps: picking buds, withering, rubbing and drying. In order to prevent the tea from oxidizing, right from the time the tea buds are picked, the withering process is carried out very quickly, and the oxidation process is immediately prevented by stir-frying or steaming. High temperatures will cause the enzymes in the tea leaves to inactivate.

Green tea fibers are shaped by rubbing on hands, pressing on pans, rubbing or rolling, creating many different shapes. Green tea usually has green or yellow tea, has a burnt smell (stir-fried tea) or smell of young rice (steamed tea), acrid taste.

Some types of green tea with added flavor and flowers are very popular in the South such as jasmine (jasmine), lotus tea, pineapple ginseng tea, lemongrass flavored tea, ginger flavor... tea)

Oolong Tea

Oolong tea is a group of teas (like green tea, black tea, etc.) consisting of any type of tea Partially oxidized from 8% to 80%. Oxidation is reflected in the color of the tea from amber to reddish brown.

Oolong is the most time consuming tea to make. It uses all 5 basic steps I mentioned above, where the crushing and oxidation steps are repeated many times. After each grinding, the tea leaves are rested to oxidize, then crushed, rested, repeated many times over many hours (several days).

This process gives the tea rich layers of aroma and taste. This flavor is much more complex than that of green tea. The tea has a very soft and silky astringent taste, rich in floral or fruit flavors. It is because of the richness of flavor but very smooth of Oolong tea that it becomes the most suitable tea for new tea drinkers.

Black Tea (Black Tea)

Black tea also uses all 5 basic steps of the tea making process, but the tea is left to fully oxidize. The steps are executed one after the other without repeating a single step. They are processed within 1 day. The tea is usually light brown to deep red in color. Black teas have the strongest flavors, some very acrid.

In Vietnam, it is often used in the form of filter bags or mixed with milk.
