Limes (Citrus spp.) – find manufacturers and suppliers

Limes (Citrus aurantiifolia or Citrus latifolia) are small, green citrus fruits and are known for their intense, refreshingly sour taste and unmistakable aroma.

They belong to the rue family (Rutaceae) and are closely related to lemons. Originally from South East Asia, limes are now grown in tropical and subtropical regions around the world. They play an important role in cooking, medicine and cosmetics.

Below is an overview of the varieties and versatile uses of limes, as well as their nutritional values:

Varieties of limes:

1. Key limes:
Small, thin peel, very juicy and flavorful.
Often used for desserts such as key lime pie.
2. Persian limes (Tahitian limes):
   Larger, thicker peel, fewer seeds.
Mostly available in supermarkets and versatile.
3. Kaffir limes:
Better known for their aromatic leaves than the fruit.
Used in Asian cuisine, especially in curries and soups.

Use of limes:

Limes have a wide range of uses:

1. In the kitchen:
Limes are versatile and add a fresh, sour note to dishes:
In drinks such as mojito, caipirinha or lime water.
For smoothies, iced teas and homemade lemonades.
In marinades for fish, seafood, meat or tofu - the acidity tenderizes the meat and enhances the flavour.
Lime juice as a dressing ingredient in salads, especially in Asian or Mexican dishes.
In guacamole, salsa or Asian dips (e.g. lime fish sauce).
For baking and desserts as lime cake, tarts, sorbets or in combination with coconut and mango.
As a final splash of juice on soups, curries or grilled vegetables.

2. In cosmetics:
As an essential oil in perfumes, soaps and body care products for a refreshing fragrance.
Lime extracts have a clarifying and brightening effect; the acid it contains can help to remove dead skin cells.
Lime juice can be helpful for oily hair or dandruff.

3. Medicinal use:
Thanks to the high vitamin C content, limes boost the immune system.
The acid stimulates the production of digestive juices.
Lime water supports liver function and hydration.
Limes have a germ-inhibiting and antioxidant effect.

4. As a home remedy:
A splash of lime juice in water or tea has a cooling and invigorating effect.
Lime juice in combination with cloves or essential oils as a natural insect repellent.

5. Decoration and fragrance:
Lime slices or zest are often used as a garnish for drinks and desserts.
Lime peel in potpourris or scented sprays as a fragrance diffuser.

Nutritional values of limes:

Limes are an excellent source of:

• Vitamin C: Strengthens the immune system and promotes collagen production.
• Antioxidants: Protects against free radicals.
• Potassium: Supports heart health.
• Acids and flavonoids: aid digestion and have an antibacterial effect.

In many cultures, limes symbolize purity and freshness. In Indian cuisine and medicine (Ayurveda), they are said to have a cleansing and energizing effect. They are also an essential part of Mexican, Thai and Caribbean cuisine.
Limes are not only versatile in culinary terms, but also healthy and practical for use in the home, medicine and cosmetics. Their refreshing taste and positive effect on health and well-being make them a valuable ingredient in the kitchen and everyday life.

Below you will find an overview of the most important criteria to look out for when buying limes:

When buying limes, there are a few key points that will help you choose the freshest and best fruit.

• Fresh limes have a bright green color.
• Light yellow spots show that the fruit is riper, but this does not affect the taste.
• Avoid dark spots, brown spots or signs of mold.
• Heavy limes contain more juice. A slight weight may indicate dehydration.
• The lime should yield slightly when pressed lightly, indicating juiciness. Limes that are too soft may be overripe or rotten. Limes that are too hard are often unripe and less juicy.
• A smooth, firm skin is a sign of freshness and a juicy fruit.
• Thin-skinned limes are often juicier than thick-skinned varieties.
• Avoid shriveled or very porous peels, as these indicate older fruit.
• A pleasant, fresh smell indicates good quality. No or a bad smell can indicate a lack of freshness or the onset of rot.
• Limes are available all year round, but are at their best quality in the winter and spring months.
• Tropical and subtropical regions (e.g. Mexico or Brazil) often supply high-quality limes.
• If you want to use the peel (e.g. for zesting), look out for organic limes. These are free from chemical pesticides and wax coatings.
• Give preference to limes that are not ripe. This makes it easier to check the individual fruits.
• In the case of net packaging, check the packaging for rotten or damaged fruit.

When buying limes, look for a bright green color, a good weight, smooth skin and a fresh scent. Slightly yielding, juicy fruit with thin skin is ideal. Organic limes should be preferred when using the peel.
